July Tomato Basil Treats

From Dorothy McNett's recipes at www.dorothymcnett.com. If possible and desired, use both cows milk and buffalo milk mozzarella and do a tasting to explore the diferences! Both are equally delicious, but there is a bit of a taste and texture difference and it is fun to do this!

crackers or thinly sliced bread
fresh mozzarella cheese, cows milk or buffalo milk, or both
thinly sliced fresh red-ripe tomatoes
fresh basil leaves
extra-virgin olive oil
pepper, freshly ground
pinches of sea salt

Slice or shred cheese. If using both cows milk and buffalo milk keep them separate so that everyone can make a taste comparison!. Arrange cheese, tomatoes, and basil on the crackers or bread slices. Drizzle with oil and sprinkle with salt and pepper.
