Fried Eggplant Slices

From Dorothy McNett's recipes at

1 clove garlic, slivered
3 tablespoons extra virgin olive oil
2 eggs, well beaten
1/2 teaspoon sea salt
1/4 teaspoon freshly ground white pepper
2-3 small eggplants, peeled
1/4 cup or more, bread crumbs (Panko is great)

First take 1 clove garlic, sliver it and put it into 3 tablespoons extra virgin olive oil and set aside. Beat or whisk eggs well, adding salt and pepper. Slice peeled eggplants into 1/4 inch thick slices. Dip into egg mixture and then into bread crumbs. Heat garlic oil in saute pan, and gently saute eggplants until browned on both sides, about 5-6 minutes total. Serve.
