Square Egg Salad

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. This requires a gadget called the Egg Press. Otherwise, just change the name to round egg salad.

3-4 hard cooked eggs
1-2 red ripe tomatoes, sliced
1 cucumber, thinly sliced
drizzles of extra virgin olive oil
coarse sea salt
freshly ground pepper, to taste

Peel the hard cooked eggs and place in square egg presses. Refrigerate at least 30 minutes, then remove from the press. Slice tomatoes, cucumber, and the square eggs and arrange on a plate. Drizzle with oil, sprinkle with salt and pepper and serve.
