Rice and Beef in Lettuce Cups

1 cup long grain whtie rice
Combine rice, water, salt and pepper in batter bowl or microwave rice cooker. Cover. Microwave on high 5 minutes, then on half power for 5 minutes. Set aside. Heat the oil in saute pan, and brown meat well, adding onions. When meat is cooked, add catsup or sauce along with the sliced tomatoes. Cook 1-2 minutes. Arrange lettuce leaves on plates or in shallow bowls, and pile in the rice and then the meat mixture. Garnish and serve.
