This is using already cooked (canned) tuna or salmon in case you do not have any fresh on hand. 1 can best quality canned salmon or tuna Place about 1/2 teaspoon of the cherry wood chips in the bottom of the smoker. Arrange tuna chunks on the rack, or if necessary on a flat metal pan. Smoke for 10-15 minutes on medium heat. Cool. To serve, arrange slices of mozzarella, tomatoes and tuna on plate, drizzle with oil, and sprinkle with seasoning and basil. Note: You could smoke the cheese instead, or both.
