Buttercream Icing for Cake / Cookie Deco
From Dorothy McNett's recipes at www.dorothymcnett.com. This can be made using a spoon instead of electric mixer but it will not be as smooth and fluffy.
1/2 cup unsalted butter, softened
Using electric beater, cream the butter Add vanilla. Gradually add sugar, one cup at a time,beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy, adding enough milk to get a desired spreading consistency.
