Date Delights

From Dorothy McNett's recipes at www.dorothymcnett.com. Great for Date Night!

1 cup dried pitted dates, finely chopped
1/2 cup crystalline raw sugar
1/3 cup water
pinch of fine sea salt
a few grindings of white pepper

1/2 cup unsalted butter
3/4 cup crystalline raw sugar
1 egg
1/2 teaspoon vanilla
1 tablespoon milk
1 1/2 cups unbleached all purpose flour
1/2 teaspoon fine sea salt
1/4 teaspoon baking powder

Combine dates, sugar, water, salt, and white pepper in batter bowl. Microwave on high 2 minutes. Stir. Microwave another 2-3 minutes, or until thickened. Set aside to cool. Preheat oven to 350 degrees. Cream the butter and sugar until light and fluffy. Add egg, vanilla, and milk, and then the flour, salt, and baking powder which have been mixed together. Roll out 1/4 inch thick on floured board, sprinkling on more flour as needed and cut into 3 inch circles. Place half of the circles on parchment or silicone lined baking sheet. Spread each of those with some of the filling. Cover with remaining circles and press the edges together with a fork. Pierce with a fork. Bake about 16-20 minutes. Makes about 12.
