Coddled Eggs

To do these, you will need an egg coddler...(a small porcelain dish with a screw on metal lid with a little handle on the top.) You can cook and serve the eggs in this. They are like baked eggs, only done in a pan of hot water.

olive oil or butter
2 eggs per coddler cup
salt and pepper, as desired

Grease the inside of each cup with a small quantity of butter or oil. Crack 2 eggs into each cup. Sprinkle with salt and pepper. Screw on the lid. Bring a pan of water to a gentle boil, place coddlers in the water by holding the little handle on the lid. Cook for 8-10 minutes, do not let the water come to a rolling boil, just a gentle simmer. Serve in the coddling dish with a tiny spoon.
