Barbecue Beef Sandwiches

From Dorothy McNett's recipes at Also known as Pulled Beef Sandwiches, as the meat will be tender enough to pull it into shreds to pile into bread buns, as desired.

3-4 pound chuck roast
2-3 onions, sliced
3-4 cloves garlic, minced or sliced
salt and pepper, to your taste
red chili pepper flakes, if desired
1 cup good quality barbecue sauce (see my recipe for Barbeque Sauce)
1/2 cup water or red wine
hamburger buns
pickles, relishes, etc.

Place the roast in a casserole or heavy roasting pan. Arrange onion slices and garlic over roast, sprinkle with salt, pepper, and chili. Pour on the sauce and water or wine. Cover. Place in 350 degree oven and cook for about 2 hours, or more. You may need to reduce the heat to 300 degrees halfway through, if it seems to be burning. The meat should pull apart with a fork. Serve, piled onto hamburger buns and garnished as desired. We always used sauerkraut. Try it, it is mighty good.
