Basmati Rice with Chutney
From Dorothy McNett's recipes at www.dorothymcnett.com. If you are serving this with a chutney main dish, just serve the cooked rice without adding the chutney. Instead, snip in about 2-3 tablespoons fresh coriander (cilantro) along with the parsley.
1 cup basmati rice or any other rice for that matter
Cook rice as directed in an electric rice cooker, or in a saucepan on the stove. Or, in a glass or ceramic batter bowl combine rice, water, salt, and oil. Cover. Cook in microwave on high 5 minutes, then on half power (power level 5) for 14-15 minutes. Stir in chutney and garnish with parsley.
