Apple and Banana Appetizer with Cheeses

From Dorothy McNett's recipes at

1-2 oranges or tangerines
1-2 apples, diced
1-2 bananas, sliced
1-2 teaspoons elderberry juice or concentrate, if desired
chopped coconut, fresh or unsweetened dried
1-2 varieties of semi-firm cheeses, sliced (Tillamook Sharp Cheddar and Vintage Sheep Gouda Uniekaas)

Peel the oranges while holding over the serving dish to let the juices run in. Cut oranges into chunks. Peel, dice and slice remaining fruits and place into the bowl, tossing with the juice just to coat. Sprinkle on elderberry juice if available, and top with coconut. Arrange slices of great cheeses on a platter with the fruits and serve, or place fruits in individual cups or plates and arrange cheese slices around and in. Create! Eat! Enjoy!
