Chicken Sesame Strips

From Dorothy McNett's recipes at www.dorothymcnett.com. This is a fabulous appetizer or a side dish, salad, etc. Perfect for a Dim Sum lunch!

1-2 skinned and boned chicken breasts
1 tablespoon extra virgin olive oil
1 teaspoon toasted sesame seed oil
1/4 cup sesame seeds
1/4 teaspoon fine sea salt
1/8 teaspoon freshly ground pepper
paprika, sweet or smoked
snipped fresh parsley

Wash and dry chicken breasts. With a sharp knife, cut chicken into strips about 1 inch wide and 3-4 inches long. In bowl, combine olive oil, sesame seed oil, sesame seeds, salt and pepper. Toss chicken strips into mixture to coat as much as possible. Spear strips with toothpicks, accordian style. Arrange in a single layer on a glass or ceramic plate. Sprinkle with paprika and more sesame seeds, if desired. Loosely cover with waxed paper or large leaf of kale or chard. Cook in microwave using 3-5 minutes as a guide. Garnish with parsley and serve.
