Hasselbackpotatis (Roasted Potatoes)

From Dorothy McNett's recipes at www.dorothymcnett.com.

3-4 baking potatoes
1 - 2 teaspoons soft butter for the baking pan
1-2 tablespoons melted butter,for drizzling
salt and pepper
2 tablespoons dry bread crumbs

Preheat oven to 425 degrees. Spread the softened butter in a baking dish or pan large enough to hold the potatoes side by side in one layer. Peel potatoes and place one on hasselback form, or a deep spoon. With a very sharp slicing knife, slice potato thinly but not all the way through. The hasselback form or spoon will prevent the knife from slicing all the way through. Repeat with remaining potatoes. Arrange potatoes in baking pan. Drizzle with half of the melted butter and sprinkle with salt and pepper to taste. Bake 40 minutes and then sprinkle with the dry bread crumbs and remaining melted butter. Bake another 15-20 minutes, or until they are nicely browned and tender.
