From Dorothy McNett's recipes at www.dorothymcnett.com. Don't worry, no oysters in here...just the shape. Enjoy fresh corn when in season! Serve as an appetizer, as a side dish, or even for a breakfast bread.
In batter bowl whisk eggs well. Stir in corn, flour, baking powder, salt, nutmeg and pepper. In heavy bottomed skillet or saute pan, heat butter or oil. Drop mixture by 1 tablespoon into hot pan, sort of elongated to resemble the shape of an oyster. When brown, turn and cook second side. Great with cheeses, with salsa or other sauces, or just as they are.
