Mashed Potatoes

From Dorothy McNett's recipes at www.dorothymcnett.com. If you are roasting a turkey and the oven is on anyway and you are using sweet potatoes or yams, cut them in half and place on a baking sheet with the cut side down and bake/roast for about 30-40 minutes. Then mash!

2-3 large russet potatoes, or sweet potatoes
1 tablespoon water
1/2 cup milk or broth
1/4 cup snipped fresh parsley
salt and pepper to taste

Wash the potatoes thoroughly and peel. Cut them into 1-2" chunks. Place in a glass or ceramic bowl, splash with the water and cover with a plate or waxed paper. Cook in microwave for 6-8 minutes or until tender. Warm the milk with salt and pepper for 45 seconds. Use a potato masher or electric beater to mash the potatoes, adding warm milk. When nice and fluffy, stir in the snipped parsley.
