Herb Olive Oil Bean Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Add snipped fresh herbs of choice if using this dressing within 1-2 days. Or, simply add snipped fresh herbs to the salad greens, along with your own cooked beans or use a can of good quality beans without added preservatives, etc. (check the labels!!)

1/4 cup red wine vinegar
1 tablespoon good quality Balsamic vinegar
1/2 teaspoon dried herbs of choice
zest of 1 orange
1/2 teaspoon fine sea salt
freshly ground peppercorns
1 teaspoon crystalline brown sugar or maple syrup
1/2 cup extra virgin olive oil

salad greens of choice, plus snipped fresh herbs if available
cooked and drained beans, such as garbanzo, black beans, Fava beans...
1-2 oranges, peeled and diced

Combine vinegars, herbs, orange zest, salt, pepper, sugar and oil in glass measuring cup and whisk well. Place salad greens in beautiful bowl or platter, add beans, diced oranges. Toss on the dressing and serve.
