Pasta Freshly Made

From Dorothy McNett's recipes at

freshly made pasta, slightly dried or totally fresh
1 pot water
1 tablespoon sea salt
drizzles of olive oil
your favorite sauce, or just olive oil and herbs, etc

Make pasta, hang on pasta rack until ready to cook. Bring 6-8 cups water to boil, adding salt and oil. When back to the boil, gently lower pasta into water, stir gently with a wooden spoon. Cook 3 minutes, no more! It may be done before that if it is very thin. Drain and serve.
