Espresso

So many choices of machines...stove-top espresso pots are easy to use, if using an electric machine follow the instructions.

2 tablespoons freshly ground fine grind Espresso Roast, or French Roast
fresh water (quantity really depends on your machine and it will take a little practice to get it the way you like it)

Grind the coffee to a fine grind, but not floury. It should have some grittiness to the feel of it. Start out with 2 tablespoons ground coffee per serving. Practice! Try to get it right before your eye starts to twitch too much.
