Pork Chops or Small Roast

From Dorothy McNett's recipes at www.dorothymcnett.com. Also known as Nova Scotia Dijon Pork Loin.

2 - 4 pork chops, or a small center cut boneless pork roast
2 tablespoons good quality prepared mustard (Dijon)
salt and pepper, to taste
1 tablespoon olive oil
1 small onion, sliced
1-2 apples, sliced
2 - 3 tablespoons red wine or water
grated Gruyere cheese, about 1/3 - 1/2 cup

Spread both sides of each pork chop or the roast with mustard. Sprinkle with salt and pepper. Heat oil in bottom of pan, and then brown the meat on both sides and also put in the onion slices. When meat has browned, add the apple slices and wine or water. Cover. Cook on medium heat for 20-25 minutes, or until pork is done. While still hot isprinkle with the cheese.
