Apricot Roses

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. These make a perfect edible garnish for any appetizer, salad or dessert plate. You must use dried Blenheim apricots from San Benito County! This recipe was presented to our television show audience at Michael and Linda's house, featuring B&R Farms dried apricots. San Benito County dried apricots (B&R Farms)

Using a rolling pin, roll out the apricots between pieces of waxed paper. Pick up one and roll it into a cyclinder shape for center of the rose. Apply more flattened apricots, shaping into a rose. Great cake decoration, or even better on a cheese platter.
