Shepherd's Pie

Stew with a yummy potato crust....from Dorothy McNett's Recipe Book at

1-2 tbs butter or olive oil
1 cup diced carrots
1 small yellow onion, diced
2 ribs celery, diced
1/2 cup peas fresh or frozen
1 1/2 pound stew meat, lamb, or hamburger
Salt and pepper

1/4 cup flour
1/4 cup butter or fat
2 cups beef broth

2 cups buttered mashed potatoes

Heat the oil in a large saute pan. Add vegetables and meat and cook until soft.
In a microwave safe bowl, cook butter and flour for 1 minute, until the butter is melted. Whisk well and add the beef broth. Microwave and whisk for one minute at a time until it thickens to gravy. Stir gravy into meat and vegetables and simmer for 5-10 minutes while you make the mashed potatoes.
Pour the meat mixture into a 2 quart oven safe dish. Carefully layer the mashed potatoes on top. Bake in a 350 degree oven for 20 minutes, until the potaotes begin to turn brown. Let stand for a couple minutes before serving.
