Black Beans with Salami

From Dorothy McNett's Recipe Book at www.dorothymcnett.com.

1 pound dried black beans
2 teaspoons Mansmith's Grilling Spice, or other spicy rub
water to cover

1 cup diced good quality salami
2 tablespoons finely chopped onion, or green onions
1-2 red bell peppers, roasted and diced
2 tablespoons sorghum
2 tablespoons barbecue spice
1/2 teaspoon fine sea salt

Wash and pick over the beans and place beans in pressure cooker. Add spice and water to cover by 2 inches. Bring to medium pressure, and cook for 25 minutes. (If the beans were pre-soaked, cook for only 10 minutes). Let pressure come down naturally, about 10 minutes. Preheat oven to 375 degrees. Dump beans into a baking dish, draining beans if necessary. Add remaining ingredients and bake for 20-30 minutes.
