Celery with Olive Oil and Assorted Cheeses

From Dorothy McNett's recipes at www.dorothymcnett.com. So simple, and such a great appetizer with cheeses, or served on top of a cabbage or lettuce salad. The slight cooking brings out a bit more sweetness in the celery.

5-6 ribs celery
1 - 2 tablespoons extra virgin olive oil
sea salt
freshly snipped chives

assorted cheeses

Wash and slice celery so pieces are about the same size. Place on glass or ceramic platter or plate. Drizzle with oil, sprinkle with seasonings. Cook in microwave 2-3 minutes, cool slightly or completely. Arrange 2-3 cheese varieties on a beautiful plate or platter to follow the theme of the meal (German, French, Swiss, Mexican, etc...) and serve with the celery.
