Raisin Sauce

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Great served with ham or smokey sausages.

2 tablespoons butter or olive oil
2 tablespoons all purpose flour
1/4 teaspoon fine sea salt
1 1/2 cups apple juice
1/2 cup seedless raisins
1 teaspoon zest of lemon
3/4 teaspoon prepared mustard
1 tablespoon lemon juice or sherry

In 4 cup glass measuring cup, combine butter and flour. Microwave on high 30 seconds. Whisk well. Blend in remaining ingredients. Microwave on high 2 minutes. Stir to blend completely. Microwave 1-2 minutes more, or until thickened.
