Raisin Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Great served with duck or goose, as well as ham or smokey sausages.

2 tablespoons extra virgin olive oil
2 tablespoons all purpose unbleached flour
1/2 teaspoon chili powder, or as desired
1/4 teaspoon sea salt
1 1/2 cups apple juice
1/2 cup raisins or currants
zest of 1 lemon
2 tablespoons lemon juice or sherry
3/4 teaspoon prepared mustard

Combine all ingredients in a heavy bottomed sauce pan. Bring to boil, whisking constantly. Reduce to simmer and cook several minutes or until thickened like a gravy sauce.
Or if desired, use your microwave oven...in 4 cup glass measuring cup, combine butter and flour. Microwave on high 30 seconds. Whisk well. Blend in remaining ingredients. Cook 2 minutes. Stir to blend completely. Cook 1-2 minutes more, or until thickened.
