Chicken Apple Sausages with Pepper Sauce

From Dorothy McNett's Recipe Book at Great with Caperberries, too! (If serving with a wine course as an appetizer, forget the caperberries) This is wonderful served with Smoked Hazelnuts on the side and a great Shiraz.

4-5 fully cooked smoked chicken apple sausages
extra-virgin olive oil
2-3 tablespoons salsa or Apricot Red Pepper sauce, etc.

Heat grill pan or saute pan with olive oil. Slice sausages on the diagonal about 1 inch thick. Cook and stir several mintues to brown. Add about 2 tablespoons of sauce. Arrange on platter and garnish with caperberries. Great served with a hot steaming bowl of rice or polenta. To serve as an appetizer, stick toothpicks into each piece and have a bowl of smoked hazelnuts handy.
