Pineapple Salsa

1 medium pineapple
1 fresh jalapeno pepper, finely chopped
1/2 medium onion, finely chopped
3-4 green onions, sliced
3-4 sprigs fresh cilantro, snipped
zest of 1 lime or lemon
juice of 1 lime or lemon
1/4 teaspoon fine sea salt
2 teaspoons brown sugar crystals

With your sharp chefs knife, remove the stem with a smooth straight cut. Using the pineapple corer and slicer, remove the core of the pineapple. Finely chop or dice the pineapple slices. Combine with remaining ingredients and serve with chips or with meatballs.
