Celery Salsa

From Dorothy McNett's recipes at www.dorothymcnett.com. This is a perfect side dish for crab or salmon cakes. This recipe has been presented on several of Dorothy's television shows.

3 ribs celery, diced
1/2 cup finely chopped onion
1/2 cup finely sliced green onion
1 jalapeno pepper, finely diced
1/2 teaspoon fine sea salt
zest of 1 lime
juice of 1 lime
1 teaspoon brown sugar crystals
1 banana, sliced and diced

Chop and dice the celery, onion, green onion, and jalapeno using a sharp chefs knife or food processor. Pour into a beautiful serving bowl, add salt, zest, juice, sugar and the diced banana. Toss, taste, adjust seasonings as desired and serve.
