Grilled Fish Steaks

From Dorothy McNett's recipes at www.dorothymcnett.com. This is wonderful for tuna, snapper, cod, salmon, and other firm fish.

1/4 cup dry white wine
2 tablespoons sorghum or molasses
2 tablespoons soy sauce
freshly ground pepper
1-2 fish steaks or fillets, fairly thick slices
zest of lemon, lime or orange
salsa or other diced vegetables and herbs as desired for garnish

In flat dish, combine wine, sorghum, soy sauce, and pepper. Marniate the fish steaks in this at least 5 minutes, as much as 1 hour. When ready to cook, heat outdoor grill or stove-top grill pan. Place marinated steaks on hot grill. Reduce heat so as not to cause the fish to smoke and burn. Gently grill several minutes on each side. Place on serving plate, sprinkle with the citrus zest and juice and then garnish with salsa or vegetables and herbs.
