Individual Servings of Fresh Fish

From Dorothy McNet's recipes at www.dorothymcnett.com. So quick and easy to cook for yourself, and delicious as well!!

1-2 fresh fillets of petrale sole or fish steak such as sea bass, halibut or whatever...
zest and juice of lemon
zest of one orange
2-3 cloves garlic, finely minced
sprinklings of sea salt
freshly ground pepper
snipped fresh herbs, your choice of parsley, dill, basil, thyme, rosemary, lemon thyme, tarragon.......
freshly grated Parmigiano-Reggiano cheese
sweet Hungarian paprika
1 teaspoon unsalted butter or olive oil

On a pottery, glass or ceramic dinner plate without any metal trim, arrange the fish. Sprinkle with remaining ingredients and dot with a little butter. Cover loosely with waxed paper. Cook in microwave using 3-5 minutes per pound of fish as your guide. Do not overcook! Fish is done when it flakes easily with a fork. Arrange the orange segments on the plate, enjoy!
