Cooked Spinach or other Greens

2 - 3 slices bacon
2-3 bunches fresh spinach
1/4 cup olive oil
1 tablespoon vinegar
1/4 teaspoon fine sea salt

Arrange bacon between paper towels on microwave bacon rack. Microwave on high, using 1 minute per strip of bacon as your guide. When done, allow to cool. In meantime, wash and spin dry the spinach leaves. Pile spinach into a large microwave safe bowl or dish. Cover. Microwave on high 3-4 minutes to wilt. Crumble bacon and add to spinach. Combine olive oil and perhaps 1 teaspoon of the bacon fat (if desired) and heat 30 seconds. Pour over spinach, toss in vinegar and salt. Correct seasonings, and serve.
