Berry or Cherry Jam in Small Batches

From Dorothy McNett's recipes at www.dorothymcnett.com. This is the perfect answer when you have some extra cherries, strawberries or raspberries, blackberries, blueberries and/or a combination that need to be used asap!

2 cups fresh cherries or strawberries, or other berries or combination
1 1/2 cups sugar
2 teaspoons powdered fruit pectin

Wash and hull or pit the fruits. Slice into batter bowl. Add sugar and allow to stand 5 minutes. Mash well. Stir in pectin. Cook in microwave on full power for 4 minutes, then on half power 6 minutes. Stir. Mixture should be slightly thickened. It will thicken more as it cools. Pour into 2-3 hot glasses or cups. Cover and refrigerate. Use within 2-3 months.

IDEA: For a great simple dessert, serve warm jam with a little high quality chocolate sauce in a small dessert cup with lady fingers on the side, and the whole thing garnished with fresh whole berries. It is fabulous paired with a deep red wine such as Cabernet, or if you prefer you could use a sweet dessert wine. But, I love the contrast and the connection between chocolate, fruit and cabernet.
