This is the perfect answer when you have some extra cherries, strawberries or raspberries, blackberries, blueberries and/or a combination that need to be used asap! 2 cups fresh cherries or strawberries, or other berries or combination Wash and hull or pit the fruits. Slice into batter bowl. Add sugar and allow to stand 5 minutes. Mash well. Stir in pectin. Cook in microwave on full power for 4 minutes, then on half power 6 minutes. Stir. Mixture should be slightly thickened. It will thicken more as it cools. Pour into 2-3 hot glasses or cups. Cover and refrigerate. Use within 2-3 months.
