Breakfast in a Skillet

From Dorothy McNett's recipes at

2-3 medium potatoes, cooked
4 strips of bacon, cubed
3 eggs
3 tablespoons of milk
1/2 teaspoon sea salt
1 cup cubed chicken apple sausage or cooked ham
2 medium tomatoes, peeled
1 tablespoon chopped chives

Peel or do not peel potatoes, and cook until tender in microwave for about 7-9 minutes, or boil in water in a saucepan until tender. Slice and set aside. Cook bacon in large heavy bottomed fry pan until lightly browned. Meanwhile in batter bowl blend eggs with milk and salt, stir in chicken apple sausages. Cut tomatoes into thin wedges; add to egg mixture. Drain away most of the fat in the frying pan, leaving the bacon and adding the potatoes. Pour the egg mixture over the bacon and potatoes. Cook over medium heat until eggs are set, gently lifting the mixture a few times to let the egg mixture settle to the bottom. When done, sprinkle with chives and serve at once. Yield 3 or 4 servings.
