Garlic Roll-Ups

From Dorothy McNett's recipes at Do this one for a fabulous appetizer or side dish.

3-4 bulbs garlic, roasted and squeezed from skin
1-2 tablespoons extra-virgin olive oil
snipped green onions
medium sized flour tortillas

for the Garlic Dipping Sauce:
1/3 cup flavorful vegetable stock
1/3 cup sweet white wine or sherry
3 green onions, very thinly sliced
6 cloves fresh garlic, slivered
3 tablespoons soy sauce
3 tablespoons freshly squeezed lime juice
3 tablespoons local honey
1 tablespoon finely minced candied ginger

Prepare roasted garlic, remove garlic cloves from skin by squeezing them out into a bowl. Add olive oil and snipped green onions, stirring to make a spreadable paste. Spread over flour tortillas. Roll up tightly. With a sharp knife, cut into 1/2 to 1 inch pieces. Serve with Garlic Dipping Sauce. Note: For a crispy new-age pizza, brown or toast some flour tortillas. Place on a plate, spread with garlic mixture and top with diced red-ripe tomatoes and a little Parmigiano-Reggiano cheese.

For the sauce: Combine all ingredients in a bowl. Heat in microwave 3 minutes, or bring to a boil in a saucepan. Serve hot or cold as a dipping sauce.
