Beef Meat Loaf

Natividad Diga, winner of Gourmet/Extra Special category for San Benito County Beef Week

1 pound ground beef
2 eggs
2 tablespoons flour
1/3 cup raisins
1/2 cup mixed frozen peas and carrots
1 small finely chopped onion
1 teaspoon finely chopped garlic
2 tablespoons sweet relish
1 small red or green bell pepper
1/4 teaspoon powdered pepper
1 teaspoon salt
1 piece medium finely chopped tomato
2 tablespoons catsup, for lining pan bottom and for over the meat
1 cube beef flavor melted in 1/2 teaspoon hot water

Mix all ingredients very well. Put into the loaf pan sprayed with Pam and lined with 1 tablespoon catsup. Pack very well to avoid space in the bottom of the pan. Then spread over the meat the 1 tablespoon of catsup. Place the loaf pan on other baking pan with water. Cover with foil to avoid burning. Cook in the pre-heated oven of 400 degrees for 45 minutes. Remove the foil and continue cooking for 10 minutes more. Remove from the oven. Remove the meat loaf while warm. Serves 10.
