From Dorothy McNett's recipes at www.dorothymcnett.com. Make this and serve with roasted chicken or other meats and fish as desired. Pickles are popular all over the world, and this is fairly typical of Canada, Northern Europe, Germany...and served with Sushi dishes in Japan!
Scrub carrots and potatoes but do not peel. Cut up into small dice. Place carrots, potatoes and garlic in a glass or ceramic batter bowl. Cover with a glass or ceramic plate or lid. Cook in microwave 3-4 minutes, until tender but not over-done. Cool slightly. Cut pickles into little pieces and add to vegetables along with the juice. This is great as a condiment with fried foods, etc.
