Toasted Coconut Marmalade Topping

1/2 cup unsweetened coconut
1 cup or so of orange marmalade

Place coconut in 2 cup Pyrex glass measuring cup. Microwave on high 1 minute. Stir. Microwave another 30-45 seconds, or until coconut is beginning to brown. Stir. Cool. Sprinkle over salads, cakes, ice cream.....or just eat.
Coconut can also be toasted in a heavy bottomed skillet by stirring constantly with a heat resistant spatula, until browned and toasty. It generally takes 5-6 minutes.
To make ice cream topping, place orange marmalade in bowl. Stir in toasted coconut. For a special taste, add a pinch of Chipotle pepper. Serve over vanilla ice cream.
