Garlic Flank Steak

20 cloves garlic
1/4 teaspoon cayenne
3 tablespoons Dijon or other good quality mustard
1 tablespoon horseradish
4 tablespoons balsamic or red wine vinegar
1/2 teaspoon coarse or fine sea salt
1/3 cup olive oil
2 flank steaks, about 2 pounds each

Peel and slice garlic cloves. Combine garlic, cayenne, mustard, horseradish, vinegar, salt and olive oil in a flat dish. Add steaks, coat meat with marinade. Refrigerate several hours. Grill over medium coals, or use a stove top grill pan. Generally grill for 4 minutes on each side for medium. Using a sharp slicing knife, slice on an angle across the grain and serve with juices. Great served with Syrah or Negrette.
