Special Dipping Sauce for Veggies and Prawns

From Dorothy McNett's recipes at www.dorothymcnett.com. Also great for spreading over crackers, bread slices, sandwiches, etc.. This makes a hearty dipping sauce for raw vegetable sticks, as well as cooked prawns, etc.

1 medium sized baking potato
8 cloves garlic
1/2 cup walnuts
1/3 cup extra virgin olive oil
zest of the lemon
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1/2 teaspoon fine sea salt
freshly ground peppercorns

vegetable sticks for dipping
cooked prawns, as desired

Wash potato well, pierce the skin several times with the tines of a fork, and place on a glass or ceramic plate. Cook in microwave about 4 minutes, or until it is done. Allow to cool. Peel if desired. With steel chopping blade in place in food processor with motor running, drop in the cloves of garlic to mince finely. Add the potato and remaining ingredients and whirl to blend completely. Pour into a beautiful serving bowl. Arrange cooked prawns or other finger foods on platter. Dip and eat.
