Roasted Garlic Rollups

2-4 heads roasted garlic (see recipe)
Roast garlic a few hours in advance so that it can cool. When ready to roll, squeeze the roasted garlic out of the "papers" into a small bowl. Mash with the soft cheese and spread over 1-2 large flour tortillas. Dice fresh pineapple into fine chunks and place over garlic mixture. Using a hand-held garnish tool, make julienne strips of the zucchini and arrange down the center of the tortilla. Snip fresh cilantro over all. Roll up tightly and place seam side down on a baking sheet. Allow to stand about 30 mintues. With a sharp knife, cut into bite sized rolls. Everyone raves!
