Honey Corn Relish

3 ears fresh ears of corn, kernels cut off
Combine all ingredients in a 2 - 3 quart bowl. Cover. Microwave on high 5 minutes. Stir. Microwave another 4-5 minutes or until vegetables are tender. Pour into hot sterilized jars and follow manufacturers directions for a hot water bath method of canning, or simply cover and store in refrigerator up to 3 months or so.
