Black Tie / Thai Stuffed Portabellas

4 - 6 portabella mushrooms, or 8 - 10 small ones
Preheat oven to 400 degrees. Brush mushrooms to clean them. Remove stems and chop them along with the carrots. Place in a glass or ceramic batter bowl, cover and cook in microwave 2 - 3 minutes. Stir in the diced tomatoes, onions, mashed beans and mayonnaise. Season with salt and pepper. Brush mushrooms with olive oil and place in casserole. Fill each mushroom with the bean mixture and sprinkle on some of the Thai fish sauce, if desired. Sprinkle with cheese. Bake 10-12 minutes, or until cheese has melted and mushrooms are nice and hot.
