Vegetable Relishes & Homemade Peanut Butter

From Dorothy McNett's recipes at While chatting with friends recently, someone mentioned that he once was served celery stalks filled with peanut butter but has not seen nor heard of it since. It was popular once upon a time as an after school snack or an appetizer.

2 cups peanuts, unsalted or salted
pinches of freshly ground pepper, or other spices as desired

slices of celery, carrots, jicama, etc.
thin slices of salami
finely snipped fresh parsley

In food processor with steel chopping blade in place, whirl peanuts until they turn into butter. You may need to add a little oil to get them started if the nuts are dry. Season as desired. Spread into stalks of celery, on top of carrots, etc. Spread some on salami slices and sprinkle with snipped parsley. Roll up and arrange on serving plate, along with sliced fresh apples or other fresh fruits.
