Tuna Rice for Lettuce Rolls

1 cup cooked cold rice
Combine rice, tuna, peas, oil, mustard, parsley and seasonings to taste. Pack into a nice bowl with lid. Wash and spin dry the lettuce and pack carefully. Take along to picnic, and when ready to serve, let each person spoon some of the mixture onto a lettuce leaf, roll it up, and eat. Also, dollop some into endive leaves and serve.
