Pork Chops with Apples and Onions

pork chops, 1 per person
Dijon mustard
1 teaspoon flour
sea salt
pepper to taste
1/2 teaspoon sage or tarragon
2-3 tablespoons olive oil

1-2 apples, cored and sliced into rounds
1/2 - 1 onion, thinly sliced
olive oil
1-2 tablespoons chutney

Brush pork chops with mustard on both sides. Sprinkle with flour, salt and pepper and a little sage or tarragon. Heat saute or fry pan with the 2-3 tablespoons olive oil. When hot, add pork chops and brown on both sides (about 3 minutes each side.) In meantime, arrange apple and onion slices on a flat plate, drizzle with oil. Cover with waxed paper and microwave on high 3 minutes. When pork chops have been turned over, lay the apple and onion rings over chops and dollop on a little chutney. Cover. Reduce heat to low and cook about 4-5 minutes, or until pork is done. Serve!
