Hamburgers Deluxe

1pound lean ground beef
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground peppercorns
1 teaspoon "dry rub" spices
1 teaspoon honey
1 teaspoon water

1 cup grated sharp Cheddar cheese
2 strips bacon, cooked and crumbled
2 tablespoons barbecue sauce
3 tablespoons finely chopped onion

a little flour or corn meal
1 tablespoon olive oil

Combine ground beef, salt, pepper, spices, honey and water. Form into 6-8 patties about 3/8 inch thick. In a small bowl, combine cheese, bacon, barbecue sauce and chopped onion. Place equal amounts of stuffing on half of the patties. Cover with the other patties and seal the edges by pressing them together with your fingers. Heat large saute pan or heavy bottomed skillet with oil. Sprinkle patties with a little flour or corn meal. Place in hot pan and sear 2-3 minutes per side, or until done to your desire.

Note: Dry rubs are plentiful, and are simply a mixture of herbs, spices, salts and peppers. If the one you are using contains salt and pepper, be careful if adding more salt and pepper.
