Onion Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. A new version of an old Italian Bread and Onion Salad.

1 med to large red onion, thinly sliced
1-2 fresh tomatoes, diced
1 package thin bread sticks
1/2 cup or more fresh parsley, snipped
fresh basil, or dried
1/3 cup extra-virgin olive oil
1/4 cup fruity or winey red vinegar
1/2 teaspoon fine sea salt
freshly ground pepper

In beautiful bowl, combine onion slices, diced tomatoes. Break bread sticks into smaller pieces and toss into the bowl along with the parsley and basil. In measuring cup, whisk together the olive oil, vinegar, salt and pepper, adding a little sugar if needed to balance the flavors. Toss into the salad and allow to stand about 10 minutes before tossing again and serving.
