Pecorino, Idiazabal or Petit Basque Cheese

From Dorothy McNett's recipes at Serve with baby greens for a wonderful salad.

1/2 pound or so of a hard sheep's milk cheese
sliced salami or Sopressata
green olives (in oil, not vinegar)
olive oil or citrus infused oils for drizzling
drizzle of honey
sprinklings of orange zest

Shave the cheese using a cheese shaver and arrange on a plate, along with the sliced salami. Arrange olives, and then drizzle all with just a tiny bit of oil, a tiny bit of honey, and a little orange zest.
