Vanilla Sauce for Cakes, etc.

From Dorothy McNett's recipes at www.dorothymcnett.com. It's like a frosting, years ago was known as a 'Hard Sauce' to spoon over warm fruit cakes and such. It can be made ahead and refrigerated. Spoon over warm or cooled cakes.

3/4 cup powdered sugar (organic is best!)
1/4 cup soft unsalted butter
1 teaspoon real vanilla extract or vanilla bean paste
1/2 teaspoon nutmeg
pinch of fine or semi-coarse sea salt
1 tablespoon brandy or fresh orange juice

In food processor with steel chopping blade in place whirl the powdered sugar. Add softened butter and process to blend well. Add remaining ingredients and process until light and fluffy, scraping down sides of bowl as needed. You may wish to add a bit more brandy or orange juice to get the fluffy consistency desired. Serve a dollop over warm fruit cake or plum pudding.
