Sweet Potato Pistachio Pasta Sauce

1-2 sweet potatoes or yams
1 tablespoon butter
sea salt
freshly ground pepper
1/4 cup pistachio kernels, roasted and lightly salted
1-2 tablespoons extra-virgin olive oil
snipped fresh parsley
freshly grated Fontina

1 pound freshly cooked pasta of choice

Peel and cube potatoes. Boil, steam or microwave the potatoes to cook them only until tender. to microwave them, place in a glass or ceramic batter bowl. Add butter. Cover with a ceramic plate or a lid. Microwave on high 3-4 minutes, or until potato chunks are tender. Add salt, pepper, pistachios. Toss over freshly cooked pasta. Toss in olive oil, parsley and grated cheese. Serve.
