Pork Roast Gravy

From Dorothy McNett's recipes at www.dorothymcnett.com.

3-4 tablespoons of drippings from pork roast
1 tablespoon unsalted butter
4 tablespoons flour
salt and pepper, as needed to season
2 cups vegetable or mushroom stock

In batter bowl, combine drippings, butter, flour, salt and pepper. Microwave on high 30 seconds. Whisk well, adding the stock. Microwave on high 1 minute. Whisk well. Microwave another 2 minutes, whisk well. Continue until gravy is smooth and thickened, adding more stock if desired. Correct seasonings and serve.
